Breakfast Makeovers - Tasty Toast

Two fantastic contenders for the Breakfast Makeover: Cheesy eggy bread and Healthy French Toast Fingers.

Cheesy, eggy bread
Preparation time: 5 mins
Cooking time: 6 mins

 
Ingredients
1 slice wholemeal toast
1 egg
20g grated chedder cheese
1 tbsp milk
butter for frying

Cut wholemeal bread into 6-8 fingers. Soak in egg mixture for 1 minute. Coat in cheese.
Melt butter in frying pan and fry cheesy eggy fingers on medium heat and cook for 2-3 minutes on each side until golden and egg cooked through.

Healthy French Toast Fingers
Preparation time: 7 minutes
Cook time: 6 minutes
Ingredients
2 slices white (I use wholemeal) bread
1 tbsp sugar free fruit spread
1 tbsp cream cheese
1 egg
1 tbsp milk

Roll bread with rolling pin until about half its original thickness and spread one slice with the jam. Spread the second slice with cream cheese and sandwich together.
Beat egg and milk together in a shallow dish.
Melt the butter in a frying pan over a medium heat. Dip the jam sandwich into the egg mixture and turn to coat.
Put the egg-coated sandwich into the pan and fry for 2-3 minutes, until the underside is golden. Flip over and cook for a further 2-3 minutes then transfer to a plate and carefully cut into fingers.
Allow to cool slightly and check temperature before serving - be careful as the jam can become very hot.
