Munch - seasonal cookbook for baby and family

I thought I would talk about Anna's new book, which has been long awaited by many of you. I was lucky enough to get a sneak preview of it prior to going to print, so I can tell you a bit about it.

Anna's cookbook, Munch - Seasonal cookbook for baby and family is a book with family and food at the very heart of it. It starts with with a lovely dedication to Anna's three boys, hubby and parents. It then goes onto offer a range of family friendly meals. Her key idea is to offer recipes which can feed both babies and their families. The recipes are ordered seasonally, with summer delights, autumn fare, winter warmers and spring growth on offer. Within these there are purees, dinners, desserts and lunches. 

Anna also covers off key issues for feeding little ones: food allergies and key foods for babies, new eaters, fussy eaters, and age appropriate foods, preparation and having fun at meal times.




I thought that I would offer you a sneak preview of one of Anna's summer delights, with a baked potato recipe. 

We recently posted on the wonderful health benefits of the humble spud in our "hot potato, hot potato" posting. New potatoes are readily available at this time of year and this recipe would make a really great simple, but yummy, summer lunch suitable for the whole family.

Anna's hot potato, hot potatoes

Ingredients and method

4 large white potatoes
1/2 avocado
2 cups natural yogurt
3 tsp fresh chives, chopped
1 cup grated cheese
4 rashers of bacon cooked and chopped(optional)
salt for seasoning

Prick the 4 potatoes with a fork and coat with oil and salt, and then bake them in their skins for 1-1.5 hours at 180 celcius. Mix the avocado with yogurt. Cut off the top quarter of each potato. Then scoop out the bottoms of the potato flesh, and add to the avocado and yogurt mix. Add the bacon, if using it. Then replace the mixture into the bottoms and sprinkle with cheese and chives.

You could chuck these under the grill for a few minutes to finish off, or eat them as they are.

This would be great recipe for a boxing day lunch, or something to whip up while you are at the bach or holidaying with the whanau.
