Life has been so busy lately, but I find often the busier I get the more I get done. Although then there comes a time when I just need stop and recharge. Which I think this might be the time as I completely missed Parent/Teacher interviews….bad bad bad mummy. It was such a shame as I was keen to talk to the teacher about my sons improvement in his reading , actually wanted to thank her for the great work she has been doing. She seems to really know how to hone into the way boys think and look after their confidence.
Anyhow since I forgot the Parent Teacher interviews I made a big effort for the Purple Cake Day that same week. I spent over three hours looking for a purple top for my son…and do you think that you can find any boys clothes in the colour purple. Why is it that colour is so gender specific! (anyhow that is a whole other topic to explore). Anyhow a lovely friend came to the rescue and we borrowed a boys purple top off her. The other thing we had to do was make a plate for a shared lunch. So I knew exactly what to make and that was Blueberry Muffins and here is the recipe below. But before that I should let you know what Purple Cake Day is all about….
Purple Cake Day is a charity event that supports children in developing countries to get the education they need to change their lives. It is an initiative of the Kenbe La Charitable Foundation Trust. This year they were raising $100,000 to help children in Haiti, Nepal, and Kenya get the education they need to change their lives. Now onto the blueberry muffin recipe;
Ingredients and method
2 cups flour
3/4 cup sugar
2 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 cup milk
1/2 cup oil
1 1/2 blueberries
Put the first five ingredients into a fairly large bowl. Toss with a fork to mix.
In another bowl beat the eggs lightly and add the milk and oil and mix.
Add the berries.
Add the dry mixture into the wet mixture and mix until just combined.
Coat 12 medium sized muffin pans with oil. Put the mixture in each cup and bake at 180 c for 15-20 minutes until muffins spring back when pressed.
